Candy-Coated Ice Cream Sandwiches
Makes 12 ice cream sandwiches
½ cup butter or margarine
1 chocolate cake mix
2 eggs
vanilla or chocolate ice cream
1 package (10–12 ounces) mini M&Ms or Reeses’ Pieces
Preheat oven to 350 degrees. Melt butter in a large microwaveable bowl in the microwave for 30 seconds. Stir until most of the butter is melted. Pour cake mix over butter. Make an indentation in the middle of the cake mix and add eggs. Stir until dough forms. Using a 2-tablespoon-size cookie scoop, drop balls of dough onto a baking sheet that has been prepared with nonstick cooking spray. Bake for 12–14 minutes.
Allow cookies to completely cool on the pan. Place a large scoop of ice cream in between 2 cookies. Press cookies into ice cream until ice cream reaches the edges of the cookies. Place mini candies in a medium bowl. Roll each ice cream sandwich in mini candies. Individually wrap each ice cream sandwich in clear plastic wrap. Place sandwiches in an airtight container and freeze until ready to serve.
