Dee McCaffrey is an organic chemist and nutritionist who lost 100 pounds and has kept the weight off for over 20 years. Her passion lies in teaching others how to shop, cook, and eat healthfully, while serving as a role model and inspiration for sustainable weight loss and healthy living. Woven throughout her books, videos, seminars, cooking classes, and food products, is a personal message of hope, empowerment, and courage for making lasting lifestyle changes.

Dee earned her Bachelor of Science degree in Environmental Chemistry from San Jose State University. During her 19-year career as an organic analytical chemist, she became intimately familiar with the chemical names and toxic properties of the majority of common environmental pollutants, particularly those used in and on America's food supply. She made the connection that pesticides, preservatives, flavorings, colorings, and refined carbohydrates affect body chemistry in such a way that balanced health is difficult to sustain. It was this understanding that led to her dramatic transformation.

During and after her weight loss, Dee spent countless hours researching the most effective and balanced path to optimal health. She also spent a great deal of time in the kitchen creating healthier versions of her favorite comfort foods.

In 2000, she returned to the classroom to become formally trained in nutrition education at Bauman College. Since then, Dee has become a trailblazer, coining the term "processed-free" to describe her nutrition philosophy of moving away from processed foods to eating foods in their closest-to-natural form. Her private nutrition counseling practice specializes in personalized diet counseling to help clients find the right nutritional balance for their health goals and lifestyle.

Her books Plan-D: The Amazing Anti-Diet That Will Change Your Life Forever and the accompanying Plan-D Cookbook: Flourless and Sugarless Cuisine, and now The Science of Skinny and The Science of Skinny Cookbook have sold in the U.S., Canada, and overseas, helping thousands of people to change their approach to food, eating and balanced health.

Dee now holds a master's degree in Human Clinical Nutrition and Integrative Health. She frequently conducts live webinars, teleclasses, lectures and cooking classes. Dee's weight loss story, books, and recipes have been featured in local and national print, including Quick and Simple Magazine and Obesity Help Magazine. She has appeared on network and cable television, and has been a guest on TV and radio shows throughout the United States and Canada.

Dee and her husband Michael McCaffrey are the founders of Processed-Free America, a non-profit organization dedicated to eliminating childhood and adult obesity through nutrition education and advocacy.

Dee is an adjunct faculty member at The Southwest Institute of Healing Arts in Tempe, Arizona, and is a professional member of the National Association of Nutrition Professionals (NANP), the American Nutrition Association (ANA), the American Society for Nutrition (ASN) and the American Association of Nutritional Consultants (AANC).     I changed to all organic and now that "Shop Rite" and "Ocean State Job Lot" carry many of the items in the raw, they really don't cost more than I was spending. I also found that "The Farmers Cow" milk is organic and less expensive than the one that says Organic because Guida packages their milk in their plant they cannot say that it is Organic. By changing to ALL FAT products, I have lost 7 pounds in six weeks, I feel better, I have much more energy, I can actually say I am going to the "Throne Room" each day rather than once a a while, and I feel good. I do not count calories, but I do watch my portion size. I eat snacks of fruit or cheese and crackers, especially if I am going out to eat at a restaurant. It helps to curb my cravings and not ask for the tempting desserts because I am full. I am not hungry now and I listen to my body. I drink no soda and have bought Schweppes seltzer flavored water and add either some organic juice to the can and it tastes like I am drinking soda. I like the bubbles to make me burp. I have bought the book for my daughters too. My daughter and her significant other are feeling much better now too and you can see the difference in my daughter's body and face. She is much less bloated and she has more energy. You have to be patient for the weight to drop after the first few pounds because your body is adjusting, but you will feel it and you will see it happening as your clothes fit differently, and you actually feel slimmer too. Once I start riding my bike this summer I know I will probably see more weight fall off because of my increased exercise. I am a teacher and spend most of my time at school and planning and when I get home I am too busy right now, or it is too late to go for a bike ride. As you know "a teachers work is never done". Good Luck and believe in this. Oh, when my mom was told she needed to lower her cholesterol she had to stop eating eggs and cheese and she would say, "Oh, I miss those things because I loved eating them"...well she stopped eating them, and she got cancer within 6mo or a year after. If you read the book it tells you have IMPORTANT these foods are to strengthening your cells against cancer invaders and how they protect you against them. I am sure that if she hadn't stopped eating them she would be alive today. Dee McCaffrey is a Chemist and she knows what she is talking about. Don't make the mistake my mom made. I know people who lived until they were in their 90's and 100 that had high cholesterol. The "REAL" fats fight fat AND Cholesterol and cleans out your body the natural way. I hope that you change like I did and I guarantee that you won't regret it.

    I purchased this book about 9 months ago, and I am still raving about it! I am surprised this book hasn't made the best seller's list!!! I couldn't read this book fast enough. It is an interesting and easy read. This book has changed my life (and my husband's) for the better! I have always been motivated toward "healthy" food. But this book is a real eye opener in that some foods I thought were healthy were either not safe even in small quantities or just not healthy. :-( It is frustrating to say the least when you are trying to be healthy and follow certain marketing guide lines and it's misleading. UGH! Health improvements I saw in the first six months: post nasal drip gone, migraines have all but disappeared, aches in hands are gone, weight loss ( I can see my muscles now and I have a waistline!) general attitude and well-being greatly improved. I was basically healthy and had always been trim. The weight started building in my mid 40's. I have always been one to take responsibility for myself, and I dieted, exercised and exercised. I could feel my muscles, but I could not see them until I was told about this book and worked it into my life. Thank you Dee McCaffrey. Your book is amazing! I am in my mid 50's now, at a weight I enjoy, I'm a lot healthier and happier!!!

    This has changed everything about how I eat. I have lost a bit of weight, but unintentionally. My main goal was to eat more healthily and this book has certainly taught me how to do that. Granted, some areas need some more research, and/or a further look in (like distiller water, which I still drink based on my own personal research), but you have to tailor it to your own needs. I found her writing style to be easy to understand, but thoroughly explained. I loved her background and the insight that provided. I am also a HUGE fan of the Spelt Chocolate-Chip Cookies...watch out! A friend gave this to me and changed my life. I seriously thank her every time I see her...I can't believe what I was putting in to my body before and what it might have been doing (or already did)! Very logical stuff, that I never took the time to consider until now...thank you Dee (and Naty)! [I had also cut out dairy after reading "Feed Your Face," but my skin never fully cleared until I started drinking enough water and cut out the crap I was putting in my body before (like refined and processed sugars and oils) thanks to reading this book. Try it, best money ever spent, trust me! I buy it for all of my friends now who compliment me on my skin and want to try it out!] I only wish the title didn't have "Skinny" in it...because I really don't want someone to think I am giving them a diet book or telling them to lose weight...

    I've read dozens of 'back to healthy eating' books and hundreds of health newsletters, including ten years of Dr. David Williams. The clear, well articulated, and thorough explanations in this book, even when discussing the same information as others have written about, make this book by far the cream of the crop. Dispelling all the ridiculous food myths with science and results oriented empirical study, Dee McCaffrey, with her chemists education and study, educates the reader leaving him or her with a clear understanding of what real food is and why, and an easy to follow plan back to genuine healthy eating (hence the term 'skinny' -- healthy people are never overweight).

    The term 'Skinny' in this book really means healthy. And in a culture of grossly irresponsible food production and consumption, and a health care system that does not include 'care of health' as a part of any plan and so can only eventually bankrupt the nation, the only safe route forward for the common man is a return to the kind of education and 'health care' delineated in books like this one.

    A true must have.

    For over a year now I have been looking into a healthy lifestyle. Being south asian my genes are a ticking time bomb of diabetes & high blood pressure. Most of my family has passed away from heart problems/strokes. Im now in my mid-thirties and seemed to be heading down the same path. In the last year I have been searching for answers I have come across many theories, many fad diets all the chemicalized food in our food chain. This is the first book I have come across which links the science of the chemicals in our natural and unatural food to the effects it is having on our bodies. In South Asia my great-grandparents and great-great-grandparents lived between 80 and 100 years of age (they ate seasonal organic food and their sugar and grains were not refined) I lost my grandparents when they were in their 60's and 70's my mum had a stroke when she was 53. Dee McCaffery's book put all the peices together and the information is clear. Eat well and healthy, live well and longer. As she is an American author she does write about the American food chain but here in the UK we are not far behind them. Cost of food production is high and companies will cut costs irrespective of the negative health consequences. In the book she fully explains the origins of sweetners. The process of how all the bran and germ is removed from wholegrains we always hear wholewheat is good white/refined flour/sugar is bad but we never fully understand why white/refined is so bad. Effects of additives and preservatives. Essential fats and virgin oils vs refined oils. How to cleanse your body and get it right & much much more. She has a diet plan and recipes that will help. This book should be called the dirty little secrets about food. I can honestly say that this book has conformed me into a healthier and leaner person. This book had all the answers I had needed and much more. I would recommend this book for every household looking for the hard truth about food and what has happened to our food in the last 100 years.

    One of the best books I have read in a very long while. It is written by a chemist, so therefore factual. It is not a diet book but how to eat healthily. Everything she says makes good sense. I have adopted her ideas as much as possible and feel much more full of life, (I am in my sixties). Highly recommend this book.

    I loved this book. Since reading it I've lost four pounds - and I already was within my BMI. All you need to know about getting slim and staying slim, or at least, shedding the belly fat. Some real eye openers in this book. Chemicals everywhere, won't be touching an apple again unless its organic!
