I am a Professional Home and Personal Chef and I also teach cooking skills. Among my specialties, Japanese foods and Sushi are a mainstay. I have reviewed many books on sushi, and I am pleased to say that this guide book is clearly among the top 4 or 5 that I have ever reviewed on the subject.I chose the Kindle Version which is wonderful on my large iPad Pro. There are not pictures of every creation, but unlike other cookbooks, that is not necessary because the various items all fall under just a few techniques that are clearly delineated with procedural pictures for the process...especially for various fish products. Very detailed.The intro sections to the actual recipes go into fine detail regarding both ingredients and tools that are made specifically for the task at hand. Descriptions are in-depth and complete.This book is not only for the first-time enthusiast, but also a great reference for more advanced and professional use as well. Easy to read and understand, this book is simply one of the best on the subject.For me, it rates a strong FIVE STARS and a hearty recommendation, but if pictures are your decision metric, then this book may not be for you. Nonetheless, if you want to really learn the secrets of making traditional sushi properly, then buy this book! Bon Appetit! I own three other highly regarded books on making sushi and this one is the best. Clear descriptions, numerous step-by-step photographs showing techniques with accompanying descriptions, numbered photographs of ingredients and tools, photos and descriptions of finished menu items abound throughout this book. This is what an instructional guide should look like. And as an added bonus, it is also quite thorough, covering every type of sushi I have personally eaten at sushi restaurants over the years. Almost every question I had about making sushi is covered in this book, including processing raw seafood correctly, complete with step-by-step photos. This book can take you from novice to capable. A big thank you to the authors for putting this together.

Five Year Update (7/13/2021)
It's been over five years since I purchased this excellent book and it continues to be the one I turn to for reference and as a refresher. Such a lovely and useful book! On top of that, my homemade sushi skills have improved to the point that our adult children now prefer to eat my sushi over restaurant sushi (how cool is that?! :-). My original purchase of this book was the Kindle edition. I'm back today for the hardcover version as a thank you to the authors and as a reward to myself for having learned this culinary art. Thank you!

This book has very good picture guides for basic sushi making, I found it a helpful companion to my other sushi books.

This is so good! I've been making sushi in America for 40 years, in Hawaii, Montana, Georgia and Seattle. This illustrated book shows you what to buy, what to use as substitute if you can't find the real deal, how to prepare different fish, how to prepare vegetables, how to prepare the rice.
Copious close-up photographs show detailed steps--from many angles--of how to prepare and assemble the sushi (and sashimi). The book is beautiful to look at and the directions are simple to execute.
There's also a chapter on "sushi etiquette" and a wonderful chapter on the sushi pantry (what to have on hand) and the sushi tools necessary (again with many suggestions for substitutes you may already have.) I have several sushi books, but this one is my favorite for its practicality as well as its beauty. Well done!!

Probably a great book for people who are into prepping fish for their sushi. We like vegetarian sushi and I bought this to accompy the supplies I bought. I guess my taste is just too a immature for this book. It's beautfully put together with clear photos, but focuses on sushi etiquette and fish techniques. I just wanted to roll up some veggies and eat them on my couch while watching game of thrones.

Great guide for beginners. It takes you through the entire process, from cleaning a fresh fish to preparing the sushi or sashimi.
