Ernie’s Light and Easy Veggie Lasagna Rolls from Sesame Street Let's Cook
Prep Time: 25 minutes | Cooking Time: 25 minutes | Makes 4 servings (8 rolls)
Lasagna is even more lovable and easy to eat rolled up. Serve with lean, grilled Italian-style turkey sausages and Elmo’s Tiny Tomato Salad on the side.
Equipment
o Measuring cups
o Measuring spoons
o Cutting knife
o Cutting board
o Cheese grater
o 9-inch square pan
o Large pot
o Large bowl
o Wooden spoon
o Small spoon
Directions
1. Preheat the oven to 350°F. Lightly grease a 9-inch square baking pan.
2. Heat a large pot of lightly salted water to boiling. Cook the lasagna noodles until they are al dente, or firm-cooked.
3 Meanwhile, in a large bowl, with the wooden spoon, combine the kale or spinach, cottage cheese, ½ cup of the mozzarella cheese, ¼ cup of the Parmesan cheese, the basil, garlic, salt, and pepper.
4 Use a small spoon to spread about ¼ cup of the cheese mixture evenly over the length of each noodle. Roll each noodle up.
5. Place the lasagna rolls, seam side down and side by side, in the greased pan.
6 Spoon the tomato sauce evenly over the rolls. Sprinkle evenly with the remaining ½ cup mozzarella
and ¼ cup Parmesan cheeses.
7. Bake for 20 minutes, or until the sauce is bubbly and the rolls are heated through.
Variations:
o Substitute mixed greens for the kale.
o Add 1 cup leftover shredded chicken or turkey or thinly sliced cooked sausage to the filling.

- 8 uncooked lasagna noodles
- 2 cups baby kale or spinach leaves, finely chopped
- 1 cup low-fat cottage or part-skim ricotta cheese, or a blend of the two
- 1 cup shredded part-skim mozzarella cheese
- 1⁄2 cup grated Parmesan cheese
- 1⁄4 cup finely chopped fresh basil or flat-leaf parsley
- 2 cloves garlic, finely chopped
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon ground black pepper
- 11⁄2 cups tomato sauce

My toddler may be more interested in the “ABC’s of Healthy Food” letter correspondences in the future but for now he delights in the vibrantly colored pages as he identifies the foods. Together time in the kitchen is one of my favorite memories from my childhood.
This book has paid for itself already with the one recipe we have tried. We substituted dried cranberries for dried cherries, and oh my gosh it tasted delicious. It is seriously better than my typical blueberry muffins; it Including oats, yogurt to replace oil, and whole wheat flower. Nutrition habits are built at a very early age and at my age I still love learning.
The recipes are grouped into various meal times and snacks. Each recipe is marked to show activities a child could help with. My son learned to measure flour more accurately, by using a butter knife to level it off. He takes great pride that he helped made the muffins.
We spend a half hour reading books each day. I plan to spend an hour a week sharing home cooked meals with his help. We very rarely eat out, due to cost.
This book will save is from evenings of mac and cheese and salmon burgers due to its variety. I highly recommend this book.

It was fine at the time, but didn't really capture his interest, and the recipes weren't so enticing to me that I ever pulled it out myself. Fast-fwd to the time of COVID - hah - I had several interests in mind: 1 - reduce iPad time 2 - present an engaging activity we could do together 3 - teach him self-sufficiency. Check, check and check! Plenty of vegetarian recipes, which is good because I'm a pescatarian - many that can easily be meatified, and, better yet - only partially meatified (so he and my husband can have meat without me having to, and yes - I know that's a made up word), all have at least a serving of veggies (or fruits for breakfasts and snacks), sometimes more, and so far the recipes have passed my husband's taste bud's test (it's a tough one - I don't pass the test often myself... LOL - I think it helps that his darling son was involved ;-). He's having fun - he told his friend via FaceTime when we were about to get started 'hey, I have to cook with my mom - it's this summer thing she decided, but it's actually fun - I'll call you back in 20 minutes, ok?' - LOL Highly recommend!

The book is like a story with recipes. It will provide you with many options for breakfast, lunch and dinner with snacks! Everything is pretty simple and most recipes have simple ingredients that you may already have in the fridge or pantry. Also, the book encourages the child to help participate in the cooking process. Letting my toddler help has made him want to try new food. This may be the case since he was the one who 'made' the meal. Either way I love this book!

We added to the first recipe (double garlic and lemon, cook tomatoes down, add basil, chicken, broth, pepper, cook in more Parmesan), and veered wildly from the second (Greek yogurt for plain, extra oil, cake flour for whole wheat flour, craisins not cherries, add vanilla, etc), and both came out surprisingly well.
The characters add to the excitement, and the habit of starting with fresh groceries and ending with a pretty mess-free meal, are the main pros to be gleaned here.

However, my grandson is somewhat of a picky eater...I have sympathy, so was I! This book has very healthy recipes, but frankly, most of them contain many vegetables. I realize for some kids helping to pick, chop, and cook the ingredients will encourage them to try them, but I just don't see that happening with my grandson. He eats very healthy food, but just not the variety this book presents. I was going to return it, but the cost is almost half the price of the book itself, so I'll keep to give to someone else's child...perhaps one with a backyard garden!

I absolutely loved using this book with my 2 year old son. It's been a fun recipe book to go through together during quarantine and we've found a few recipes we'll continue using. My son will even just flip through it and look at the pictures if I'm doing a step he can't do. Definitely recommend it.
