Excellent book. As the name suggests, vegetables are the star of the show, and prepped on the grill. I had assumed this would be a book of vegetable sides. To my delight, each recipe is a perfectly complete dinner on its own. Perfect! Healthy, fresh, colorful, and delicious! Recommend!The book is printed on black paper, which makes it look really cool, but it’s kind of a deal breaker if you take notes and draw all over your cookbooks. I picked up a white gel pen, and voila! Problem solved. It shows up beautifully! Here’s the link if you need some, too.Sakura 37488 3-Piece Gelly Roll Blister Card Medium Point Gel Ink Pen Set, WhitePictured below:1) Illustration of white gel on the book.2) Burst Fresh Tomatoes with Halloumi and Basil Oil – p 42. She offers lots of variations in the book. For this one, she suggests subbing in peaches or watermelon for the tomatoes. Our peach tree is bursting, so I went that route. Delicious and really easy salad. I’d never bought Halloumi cheese before. I grew up in Wisconsin, so I was thrilled that after I pulled it off the grill, it was squeaky like cheese curds!3) Quinoa Tabbouleh Stuffed Peppers – p 106 (cover). Super flavorful, fragrant, and pretty. I’d never heated feta cheese before. It’s so much more decadent when it’s just a little melty.4) Broccoli Steaks with Cheddar Beer Dipping Sauce and Grilled Onion Rings – p 51. We loved this dinner. I had no idea you could grill onion rings. And they’re fantastic. The sauce is wonderfully oozy. I love that she points out that you only use a quarter cup of beer in it, so you should be using the good stuff, and drink the rest while you’re grilling.5) Asparagus and Green Beans with Farro, Peas, and Ricotta Salata – p 91. This is divine. She says it’s one of her most requested recipes, and I can see why!6) Squash Tacos with Black Beans, Pickled Onions, and Pepita Salsa – p 71. Yum! This is a total kid pleaser!7-8) Grilled Shakshuku – p 44. Awesome. The author’s eggs look like they’re sunny side up with a bright yellow yolk on top. My egg white filmed the top – maybe because I closed the grill cover? Anyhoo – delicious!9) Corn Salad with Miso and Fresh and Grilled Cucumber – p 113. Love the miso flavor. I made this early in the day and tossed it in the fridge so it would be ready for dinner when the kids were finally ready to climb out of the pool. Lovely for a lazy summer night. Great with pinot grigio, too. ;) This is the only one that I modified. I wanted it a little more substantial, so I added a little toasted pecans and feta after I snapped the pic.10) Eggplant Rollatini – p 59. Too yummy, and very simple, despite how adorable they are.Some others I have flagged to try: Moroccan-Spiced Squash Fattoush with Lentils – p 68 * Coconut Curry Squash – p 70 * Tofu Tacos with Creamy Cabbage Slaw – p 74 * Mushroom and Tofu Spring Rolls – p 114

Sophisticated vegetable dishes that made me feel like a restaurant cook. The recipes are exciting and packed with flavor. I made the farro and mushroom burger - the texture was so satisfying and the flavors were layered and complex. I also tried the grilled cabbage and pineapple with peanut sauce - perfect for a tropical feel to a meal on a hot night. I never would have thought of the flavor combinations, but everything I've tried so far is delicious! She includes alternate preparations so I could easily use my grill pan.

Being vegan, friends seem to be at loss as to what I can eat. So bring my own veggies to backyard barbecues!

This book has really pretty pictures and the recipes sound great! Unfortunately, most of the recipes have some kind of dairy in them. I will try some recipes with dairy free alternatives and then review my review.
