Kale, Hummus, Snack
Cooking Ingredients
  • 2 1⁄2 cups boiling water
  • 1⁄4 cup extra-virgin olive oil
To Rehydrate

1. Open dehydrated hummus bag and pour into a small heat-safe bowl, then add boiling water.

2. Let sit for 2 to 3 minutes, then stir, cover, and refrigerate for 2 hours. It will thicken as it chills.

3. Stir in extra-virgin olive oil before serving.

Kale is known as a “superfood” due to its high vitamin and antioxidant content.

This recipe is not just great tasting, it’s good for you! Win-win.

Makes 2 1⁄2 cups.

Large Bag:

1 cup dehydrated pureed chickpeas, crumbled.

3 tablespoons sesame seeds.

1⁄2 teaspoon finely ground dehydrated garlic.

1 cup dehydrated kale leaves.

1⁄2 teaspoon dehydrated lemon zest.

1⁄2 teaspoon sea salt.

To Store

In a blender, combine dehydrated ingredients and blend until smooth. Place in a canning jar, or vacuum-seal with an oxygen pack and double-bag in Mylar for long-term storage.

Blueberry Oatmeal Bars - featured on page 150

Cooking Ingredients
  • 6 ounces cream cheese, softened
  • 3 cups water
Directions

1. Place ingredients from large bag into mixing bowl, stir, and fold in softened cream cheese until batter is crumbly.

2. Reserving 1 cup for topping, press remaining crumb batter into a 10 x 10-inch greased baking pan.

3. Place ingredients from small bag into a pot. Add water, bring to a boil, and stir constantly until thickened and hydrated. Set aside to cool.

4. Preheat oven to 350oF. When filling is cooled, spread evenly over batter in pan.

5. Sprinkle reserved crumb batter over filling. Place pan in preheated oven and bake for 35 minutes.

6. Cool, cut into 12 bars, and refrigerate.

A sweet treat for breakfast or dessert.

Makes 12 bars

Large Bag:

11⁄3 cups all-purpose flour.

1⁄4 teaspoon baking soda.

1⁄4 teaspoon salt.

1 cup rolled oats.

1⁄2 cup brown sugar.

Small Bag:

1 cup dehydrated blueberries.

1 teaspoon dehydrated lemon zest.

1 tablespoon cornstarch.

To Store

Place all ingredients into bags. Place small bag into large bag, seal, and label with cooking instructions.

Steven Gangloff, MD was born and raised in Buffalo, New York. He is a board-certified neurologist, and currently completing a fellowship in Epilepsy at Duke University Hospital. He graduated top of his class with a degree in Biology and Chemistry with Research Thesis Honors distinction from SUNY Fredonia, then obtained his medical degree at the University at Buffalo School of Medicine. In addition, he has research experience in neurology, genetics, and molecular cell biology from SUNY Fredonia, University at Buffalo, and Harvard Medical School.

Having additional interests in business, web design, and food science, Steven became the founder/CEO of Dehydrate2Store. From the creators of the Ultimate Dehydrator Cookbook, the Quick And Easy Dehydrated Meals In A Bag book is designed to help you create your own healthy and cost-effective meals in a snap. Rather than having to purchase the overly preserved and processed quick meals in the supermarket, you can make your own meal in a bag. Chapter One describes what A Meal In A Bag is, then goes on to describe how to Assemble Your Meals In A Bag, what Materials, Bags And Sizes, and Powdered Substitutions you will need. Chapter 2 is “Storing Your Meals“. It includes information on what will cause a problem with your Long-Term Storage and information on Shelf Life. “No-boil Noodles And Spiraling” is covered in Chapter 3. This explains how to create your own No-Boil Instant Noodles, and discusses Spiralized Fruits And Vegetables. I like that throughout the instructions there are Fun Tips to help you along and Pro Tips which give you the tricks of the trade. With Chapter 4 comes the beginning of the recipes. Recipe chapters include: Seasonings Appetizers And Dips Pour And Go Meals Meals In A Bag Desserts In A Bag Bread In A Bag Breakfast In A Bag Prepackaged Variety Pack Oatmeal Backpacker Meals And Snacks There are only a very few photos, all are found in the middle of the book. The recipes all include a brief introduction, yield, and simple instructions. Many of the recipes are small enough that they fit two on a page. Surprising Variety I was quite surprised by the variety recipe types and flavors available. I was expecting something very basic flavor-wise, and have been pleasantly surprised. This book is not for somebody new to dehydrated food. It is excellent for anybody who wants to be able to take their dehydrator to the next level. These ideas and recipes would be an excellent way to create quick easy meals without the overly processed food you get in the supermarket. If you are a survivalist, like to go camping or hiking, or are someone who wants to keep stocked up on tasty food in case of an emergency, you will need want book.     I originally ordered The Ultimate Dehydrator Cookbook by the same author. Then I discovered this book. I heard so many good things about the first book and how comprehensive it was, I wondered whether the second book, Quick & Easy Dehydrated Meals in a Bag, would even be necessary. When the first book arrived, I could see why everyone said it was a must have book for people who dehydrate foods themselves. Most of the book was recipes (398). So I wondered if the Meals in a Bag book would even be necessary or if would just be repeating a lot of what was in the first book. When it arrived, I was SOOO happy I bought it. The recipes focus primarily on meal in a bag foods and some other specialty items. It is exactly what I've been hoping for! The recipes are straight forward and simple, but very interesting. Not the same old thing, but not weird either. They are recipes I really think I'd like to make, not at all gimmicky. There's a really nice variety of recipes. As a vegetarian, I was happy to see a lot of recipes that I could actually eat. A few others I might have to substitute a vegetarian bullion for a beef or chicken bullion, but that's a simple fix. I think I'll probably end up using this book more than the 1st one I bought. It has Meals in a Bag recipes, but I will probably end up putting them in Mason jars instead. The recipes aren't only entrees or "meals", there are also breads, deserts, soups, seasoning mixes, etc. I was surprised to see recipes for things like dehydrated vinegar and soy sauce. Those alone made the book worth buying! I highly recommend getting this book if you want to make Meals in a Bag (or Jar). You won't regret it!

    This book is chock full of recipes for breakfast, lunch, dinner, and dessert, backpacking and camping meals, too. Most seem easily customizable and if you are a freeze dryer as well as a dehydrator you'll be able to rectify the meals that require a fresh protein. My second book by Tammy Gangloff. I love them both.

    Wide range of knowledge and experience. The author knows what she's talking about. My one gripe is not with her-'it's the structure of online books. This a reference book and needs an index. It is very difficult to flip back and forth between topics to compare information.
    The writer herself writes well and her topics are interesting and appropriate to the subject but it's a shame that such a useful book should be hampered by a lack of usability. She deserves better and so do her readers.

    I’m interested in using dehydrated foods in prepping. Much of this book is geared toward the putting it together then using a slow cooker. I think I can still use her inspiration to modify dehydrated meals that are hydrated with hot water. I’m gluten sensitive so I was happy to see most recipes are gluten free. I also appreciate the variety of ethnic flavors included.

    Easy recipes, with complex flavors! Especially love the caramelized onion powder! Perfect companion to “The Ultimate Dehydrator Cookbook”! I dehydrate everything I grow, from apples and beets to watermelon and zucchini, and have made many of these recipes! All are delicious, nutritious, lo cal, no fat. Even if you only use fresh ingredients, this would be a great addition to your cookbook library!

    Here she goes again.... The problem with her "recipes" in a bag or jar is that they're not complete. You need to either add dehydrated this or that to complete the recipe or when you use the bag or jar contents, you have to augment the recipe with things from your pantry like CHICKEN or eggs or sour cream. Doesn't she know you can get all this stuff freeze dried, dehydrated or powdered? This is not a meal in a jar/bag just add water sort of thing. Another thing is that she doesn't use that very many herbs or spices, so if you want any flavor, you're going to have to think that through. I got this book because I thought the meals would be complete, but they're not. The one thing she does seem to be spot-on about though is her ratios. Ingredient to water or stock, for example. And, she does give a lot of great ideas. So, all in all, the book isn't a total waste of time and money. I just wish she would've taken that extra step to use food storage ingredients!

    If you are new to dehydrating- this woman has all the books needed to make you a pro. I received them for Christmas and now feel the need to thank her personally for providing such insight on dehydrating foods. Would recommend!!

    I love this book because we do go fishing and camping or for just when we are travelling away for a few days and I can also use freeze dried ingredients instead of dehydrated , great recipes for the whole family , and friends .

    Useless book, with no photographs to go along with the recipes. It should be a crime to print cookbooks with no images to accompany the dishes.
