Grilled Honey Dijon Pork Tenderloin with New Potatoes from At Home with Natalie

Serves 4 to 6

This is a low-fuss meal you can make in about 30 minutes, though I do recommend letting the pork marinate for the deepest flavor and tenderness. It’s a good one for when you have company over, as you can prep it all before your guests arrive, then throw the tenderloin on the grill and the potatoes and green bean foil packs either in the oven or on the grill, and that’s all.

Directions

Make the marinade: In a medium bowl, whisk together the olive oil, lemon juice, mustard, honey, green onion, garlic, thyme, oregano, rosemary, lemon zest, salt, and pepper. Set aside in the refrigerator. Bring to room temperature and whisk again before using.

Marinate the pork: Season the pork with salt and pepper and place in a large resealable plastic bag. Add three-quarters of the marinade (reserving the last quarter for the green beans and potatoes) and marinate the pork in the refrigerator for 1 hour.

Heat a grill to medium-high, about 400°F. Preheat the oven to 450°F (if you’re using the oven method for the vegetables).

Put the beans and potatoes in a covered microwavable dish with 2 tablespoons water. Microwave on high for 2 minutes. Remove and let sit until cool, with the lid still on, to allow them to steam. Drain any liquid out of the dish.

Assemble the veggie packets: Place the green beans, potatoes, and green onions in the center of a large piece (about 18 by 28 inches) of heavy-duty aluminum foil, enough to bring up the sides and create a foil packet around the vegetables. (It helps toput the foil into a 2-inch deep baking dish, put the veggies in, and fold the overhanging foil up over the veggies to make the packet.) Drizzle the remaining marinade over the vegetables, season with a pinch of salt and pepper, then seal the packet closed. Put the packet directly on the preheated grill. Grill for 30 minutes.

To oven bake the veggie packets: Assemble the packets as per step 4. Put the packet into the preheated oven, directly on the oven rack, and bake until the vegetables are cooked, 30 to 35 minutes. Open up the packet after 30 minutes and check for doneness. Put it back into the oven and cook with packet open for the last 5 minutes.

Remove the pork tenderloin from the marinade and put it on the grill. Rotate to cook on all sides, basting with the marinade from the bag occasionally using a grill brush. For medium-well, the pork will be done in about 35 minutes, though once off the grill check the temperature to make sure it registers about 145°F internally. Let it rest for 5 minutes, then slice.

Put the foil packet of vegetables in a deep serving platter, open it, remove the foil, and arrange the sliced pork on top of the vegetables.

Notes

I like to use very thin French greens beans or haricots verts, but if you can’t find them you can make French-style green beans by trimming regular green beans, then slicing in half lengthwise.

Allow 1 hour to marinate prior to grilling. You can use either the grill or the oven for the vegetable packets.

  • 2⁄3 cup extra-virgin olive oil
  • 1⁄4 cup fresh lemon juice
  • 2 tablespoons whole-grain Dijon mustard
  • 1 tablespoon honey
  • 1 green onion, thinly sliced
  • 1 garlic clove, minced
  • 1 teaspoon minced fresh thyme, or 1⁄4 teaspoon dried
  • 1 teaspoon minced fresh oregano, or 1⁄4 teaspoon dried
  • 1 teaspoon minced fresh rosemary, or 1⁄4 teaspoon dried
  • 1⁄2 teaspoon grated lemon zest
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon freshly ground black pepper
  • 2 pounds pork tenderloin
  • Salt and freshly ground black pepper
  • 1 pound fresh French green beans, washed and trimmed
  • 2 cups halved baby red potatoes
  • 3 green onions, cut lengthwise into thin ribbons

About the Author

Natalie Morales is the West Coast anchor of NBC News’ TODAY, host of NBCU’s Access and co-host of Access Live. She previously served as news anchor and co-host of TODAY’s third-hour. She joined TODAY in 2006 as a national correspondent and has reported for all NBC News platforms including NBC Nightly NewsDateline NBC and MSNBC. Morales has contributed to several major breaking news stories, including coverage of the Royal  Wedding in 2011 and the birth of Prince George in 2013. In October 2010, Morales live-translated and reported on the Chilean miner rescue—coverage that was seen worldwide and recognized with a 2010 National Headliner Award. Her other notable reports include the 2009 presidential inauguration and Hurricane Sandy in 2012. Morales has also been an integral part of NBC’s coverage of the Winter and Summer Olympics since 2004.
 
Morales has won three Daytime Emmy Awards as part of TODAY’s recognition as the best morning news program.  She has won two Gracie awards in 2013 for Outstanding Series for Dateline’s “My Kid Would Never,” and in 2016 for her
Today Show series “I am Unbroken.”  And as part of TODAY’s ‘Shine a Light’ Campaign in 2014, Morales ran in the Boston Marathon and raised over $75,000 for victims of the 2013 bombing.
 
Morales, who speaks Spanish and Portuguese, was born in Taiwan and spent much of the first 18 years of her life living overseas in Panama, Brazil and Spain as an Air Force “brat.” She graduated
summa cum laude from Rutgers University with a bachelor’s degree in journalism and Latin American studies and was a member of Phi Beta Kappa. She currently resides in Los Angeles with her husband and two sons.

    Can you say awesome?? I can't say it enough when it comes to this cookbook. When celebrities or TV personalities create cookbooks, sometimes they are fantastic and sometimes they are just plain mediocre. This one is really, really fantastic. Most of the ingredients are family-friendly...you probably have most of them in your pantry already. This makes it very easy to make most of the meals presented in the book...as a very experienced cook, I noticed that there are only a few ingredients that I would have to purposely go out and buy. Nice! If you're a busy Mom, like me, this is so important! I made the pork tenderloin with green beans and red potatoes - it was basic but very good and it was EASY to prepare. The pork was so tender; it was wonderful! The green beans and red potatoes, while simply seasoned, were easy to fix and a nice compliment to the pork. I also made the banana bread. I have tried hundreds of banana bread recipes over the years and I do have an all-time favorite so I was skeptical that this recipe would compare - especially since it has healthier ingredients. I can tell you now - I now have TWO delicious banana bread recipes - this one equals and rivals my original. It disappeared quickly in two days after my family gobbled it down for breakfast! I can tell that all of the meals will be like this and I can't wait to make the others. You won't get anything too overly gourmet in this book; after all Natalie is not a chef but she could be! There are some fun and exotic meals that take things up a notch. There aren't a whole lot of desserts in this cookbook but the recipes do look fun and easy to make especially the light coconut cream pie. The only slight disappointment was that the nutritional content was not included because I do count my calories. Overall, this is a superb cookbook with awesome (there's that word again!), yet basic recipes that anyone can make. It's beautifully photographed and I think it's really nice that Natalie shared these recipes with all of us! I don't think you can go wrong with this one!

    This is a great cookbook. I've tried many recipes so far and they were a great success with my family and guests. The recipes are easy to follow and did not require too much prep (so important for busy families!). There is something for everyone in this cookbook. The book itself is well organized and has a lot of pictures of the finished recipes. I also loved all of the side notes to the recipes, that either had personal stories from Natalie or some suggestions for swapping out ingredients. I am inspired to continue to try more of these dishes.

    This is a great cookbook! I really like the variety of recipes presented, along with the pictures and personal anecdotes. You can find anything from Latin inspired ropa vieja to old American standards such as mac & cheese and chicken nuggets. I love the fact that healthier ingredients and preparation are worked into the recipes without compromising the taste. My family has loved everything we have tried! Most importantly, as a busy mom of 3, these recipes are easy to prepare and follow!

    I loved this book. Almost every recipe is a keeper. Looking forward to making the flan recipe and many of the breakfast offerings. I’d recommend this book to anyone looking for recipes that area bit out of the ordinary.

    LOVE this cookbook! It is easy to follow, even for the novice cook and At Home with Natalie is written such that you feel as if you are cooking with an old friend. I love the family photos & the blurbs before each recipe. HIGHLY Recommend this to everyone!

    Natalie, You should have given nutritional content! Some of the recipes are straightforward and interesting but there are many time consuming ones as well.

    This cookbook is amazing! I love to cook & so far I haven’t found a recipe that wasn’t delicious ! I made the lemon ricotta pancakes, to die for! Topped them with lemon curd 😋 Tonight I made chicken tacos, so yummy! Recipes range from quick to moderately time consuming.
