Instantly French!: Classic French Recipes for Your Electric Pressure Cooker Kindle Edition

4.6 out of 5 stars 123 ratings

The first electric pressure cooker book devoted to French food brings French cuisine to your table without the hassle.

“Ann Mah has figured out how we can master the soul of French cooking and do it in less time than maman did.” —Dorie Greenspan, author of Everyday Dorie

Author of
Mastering the Art of French Eating, Ann Mah is undoubtedly an expert on all things relating to French food. But when she discovered the electric pressure cooker, she realized that it was the secret weapon the French have used for years to speedily prepare the complex dishes of la cuisine de grandmère. In her first cookbook, Ann celebrates everything gastronomically French that an electric pressure cooker can do with over seventy different recipes that cut cooking times in more than half.

The delights of
Instantly French! range from appetizers like eggplant caviar, pâté de campagne, and savory mini blue cheese cakes to soups like traditional French onion or an autumnal purée of butternut squash and chestnut. For main courses, there are classics like boeuf bourguignon, cassoulet, chicken tagine with preserved lemons, and blanquette de veau. Desserts feature poached pears, flourless chocolate cake, and crème brulée. And, all of these dishes can be made in a fraction of the time they usually take. Illustrated throughout with full color photos, Instantly French! is the essential guide to fast, delicious French cooking with your electric pressure cooker.

“Ann Mah takes a very classic—and extremely personal—look at the popular electric pressure cooker. Here is how I describe her studied approach: inquisitive, detailed, precise, adventurous, accurate. Bravo!” —Patricia Wells, journalist, author, and multiple James Beard Award winner, living in Paris and Provence

Instantly French! Proves that you don’t need fancy techniques, finesse . . . or a lot of time to make delicious French cuisine. Ann Mah’s collection of authentic yet up-to-date French fare will free you up to sip and savor a glass of wine (preferably French!) until dinner is served.” —David Lebovitz, author of My Paris Kitchen and L’Appart

Easy, elegant, delicious meals!

Easy, elegant, delicious meals!
I adore this cookbook. The photos are gorgeous, the instructions are easy to follow, and the ingredients are easy to come by. There's no need to blow the grocery budget to make an elegant meal. Ann Mah does an amazing job explaining techniques, so you don't have to come to this book with extensive cooking knowledge, and not only did I enjoy the meals I made, but I learned a great deal while making them. All this, with the ease of Instant Pot cooking!

Description was accurate ( gently used) the piece was fair, and delivery was quick!

This cookbook is amazing. The food is delicious, the flavors are delicious and the instructions are straightforward. Each recipe uses fresh food for flavor, rarely leaning on dried spices or premixed items. What you get out of the Instant Pot is food that makes you look like a gourmet. It is not convenience food, however. There are some recipes that are quick (the very first one only cooks leeks for a few minutes total, and they turn out amazingly tender) but most are 1+ hours of prep and/or cooking. The food is so good that it is worth the time! My favorites are (in English, sorry!): Crispy potatoes, creamy carrots, mustard chicken (delicious skin-on, bone in chicken thighs that always turn out tender, moist, and tasty), peasant soup, and those leaks with walnut vinaigrette. I use my instant pot 3-5 times a week and at this point at least one of those times will be a recipe from this book!

I was at first skeptical about the Instant Pot generally but Ann Mah's book has completely revolutionized meal times in our house. We visited Paris this summer and the food was absolutely delicious, when we got back to the US we felt like we wanted to give French cooking a try, although we managed the cooking and preparation time to be a show stopper.

With Ann's book we were able to prepare delicious French cuisine at home with minimal effort. As we have to send the kids lunch with them to school, it also changed their eating experience also. The kids particularly love the pork and green lentils dish which they regularly ask for but there are so many hits in this book that I have been so impressed with.

I can't recommend this book enough, 5 stars!

My husband and I are on the last chapter of 'Mastering the Art of French Eating,' for our bedtime story reading together. We have thoroughly enjoyed it. One important thing it has taught us is how thoroughly Ann Mah researches and tests recipes, so she deeply understands them, and also that she then writes them very well too. I have just received our copy of 'Instantly French,' and already I am so delighted with the scope of the recipes, and to find included so many of the ones from her Year-In-Paris and beyond, which I can now enjoy without cooking for days on end. Doing both in tandum provides a rich and satisfying experience, which I expect to be with us for a long time and many good meals to come. Thanks, Ann!

This book has amazing, easy to make recipes that taste delicious! I am not a great cook and I like my Instant Pot, but this cookbook has recipes that I actually want to make and are achievable for me! I would highly recommend it for others. The only thing I wish that the author/publisher would do would be to add a Table of Contents in the pictures. This would be helpful for others to determine if there is recipes that they would want.

I’m confused about some of the reviews of this book... the pictures are definitely in color and look so appetizing! This is one of my all-time favorite cookbooks and definitely my favorite Instant Pot cookbook. The beouf bourguignon and salmon with melted leeks are two of my and my husband’s favorite recipes and he requests the latter on a weekly basis. I think I’ve tried five recipes from this book now; the recipes are written well and the flavors are great. I can’t recommend it enough!

Amazon Vine Customer Review of Free Product( What's this? )
This is a well-written book that thoroughly explains each step, which I appreciate. But the recipes are not simple, and it's probably foolish to think that any classic French recipe would be. Most require extensive prep and many ingredients. As I read most of these, I thought, "this could be just as easily accomplished without a pressure cooker." Your mileage may vary, of course. If you are particularly interested in expanding your pressure cooker repertoire, I recommend this book. If you are interested in just learning to cook French food, you would probably be better served by Julia Child or Jacques Pepin.

Ann Mah does it again! A fantastic book with easy to read and make recipes. I've tried several so far and have loved everything that's come out of my Instant Pot. This book really got me using the IP to do more than just make yogurt. Five stars.

Some easy to follow recipes, well written. Doesn't compare with French food properly cooked but still produces a flavorful product and a short period of time.
