Apple Pie Filling
Makes one (9 to 13-inch/23 to 33-cm) pie
Instructions:
Thinly slice the apples into flat slices so the filling can be made smooth under the top crust. Place the apple slices in a large bowl and sprinkle the lemon juice over them if they are very sweet or if you need to keep them awhile before using. The juice will add tartness and also keep the apples from turning brown.
Add the flour, brown sugar, cinnamon, nutmeg, and allspice. Mix all the ingredients with your hands or use a large salad spoon and fork. It’s important that all of the apple slices be coated evenly with the flour, sugar, and spices.
Pour or spoon the apple mixture into a prepared pie shell and scatter small bits of butter over the surface. Alternatively, you can melt the butter and drizzle it over the top of the apples. Proceed with your top crust, decoration, and baking as directed.
For a pleasant variation, add 2 tablespoons (30 ml) of Calvados to the apple mixture before putting it in the crust.
Ingredients
- 8 to 12 medium-sized apples (tart, firm varieties such as Granny Smith), peeled and cored
- 12 tablespoons (180 ml) freshly squeezed lemon juice (optional)
- 2 tablespoons all-purpose flour
- ¼ to ¾ cup (50 to 150 g) brown sugar (according to taste and the sweetness of the fruit)
- ½ to 1 teaspoon ground cinnamon
- ½ teaspoon freshly ground nutmeg
- ¼ teaspoon allspice
- 2 tablespoons butter

About the author
Karin Pfeiff-Boschek was born and lives in a rural area of central Germany. Both of her grandmothers were avid bakers and influenced Karin as a young child so that she began a baking career in her early years. After meeting her US-born husband she became interested in pie baking. Coming from the field of textile design she began applying her training to the embellishment of pie crusts. In less than two years her Instagram account grew to include 200 of her edible art works and over 85,000 followers. As a skilled and talented photographer she presents her pies in dramatic and appealing photographs. In addition to baking and photography Karin, together with her husband has completely renovated a 22-room abbey in which they live.

I can't wait to try out freeze dried powdered blueberries to color dough. There are so many available flavors & colors like mulberry, strawberry, even beets! Recently, I've seen recipes turning sliced root vegetables & fruit into roses for pies & tarts. Why not use these freeze dried powdered fruits & vege's to add color to tint & color these and even pastry cut-outs instead of gel food colorings. It's worth a shot, wish me luck. I'm hoping to add color and flavor to potato roses, etc...
Would I give this book as a gift? Yes, there's always a cook in your life that would love new and proven ideas for a special dinner, pot-luck, or even a gift for your local police or fire department for the holidays. Most people forget our 1st responders over the holidays. Or even just to make your family smile when they see it, just before they demolish it. In my opinion, the book was a good investment for an addition to my cookbook collection.
If this book didn’t have a single recipe, I would still have purchased it. The ideas and techniques are really helpful. I am an experienced baker… but never made lattice pies because they are fussy and often, and exercise in frustration and futility. This year, success … easily, using the books techniques.
In addition to the practical aspect, there are just LOTS of ideas. And yes, right now, those same ideas are on Pinterest, but in 5 years, they will be gone, and the inspiration with them.
