Vegan Recipes from Spain Kindle Edition
Spanish food is all about making the most of the best local produce. It conjures up many associations ? friends eating and laughing together, delicious wine, relaxing holidays, or a balmy breeze under a colourful waterside umbrella. Above all it is perfect for sharing. Geography and climate, has had a great influence on its cooking methods and available ingredients, and these particularities are present in the dishes of the various regions. Spanish cuisine was also shaped by a complex history, where invasions and conquests have modified traditions and made new ingredients available. Gonzalo Baró has brought this feeling of life into his recipes ? in either traditional, usually very simple, honest dishes or unusual, new ones. He brings this gorgeous fresh country cuisine to our tables in chapters covering Basics, Tapas, Pinchos, Appetizers, Main Dishes, and Sweets. There are pages and pages of mouth-watering recipes for alioli, romesco, gazpacho, ajo blanco, mushrooms with sherry, stuffed piquillo peppers, fried salad hearts, green beans in tomato sauce, grilled asparagus, crispy vegetables with orange alioli, wild rice salad with sherry vinaigrette, sweet potatoes and grapes, yams with chard sauce, paella, tortilla, padron peppers, and a host of sweet treats.

- Reviewed in the United States on November 11, 2020Different and authentic recipes allowed us to relive our travel across northern Spain.
- Reviewed in the United States on June 15, 2019The recipes are really easy to follow and turn out great. The vegan paella is a regular dish for me now. Romesco sauce that I tried on their Pan-seared Asparagus is a revelation. The Olivier salad is a strange thing to have in a Spanish cookbook (as it's a Russian dish), but it's a correct from a Russian perspective and tasty.
The only real trouble I've had is that some of the ingredients are hard to find in US. Bomba rice, for example, seems non-existent. I've worked it out with another medium-grain rice, but had to figure out how to adjust the liquid. It would have been helpful to have some more options for the rare ingredients.
Another small point against is that there's at least one small error in the paella recipe, which mentions artichokes in the list of ingredients, but doesn't indicate where to add them.
Still, all-in-all, really good introduction to Spanish cuisine for vegans without having to figure out the substitutions.

- Reviewed in the United States on September 11, 2018So I received my copy today and although I was exited about the opportunity to own my first Spanish food cookbook, especially vegan, I was quickly disappointed by the lack of heart in the book. Though some of the recipes were interesting none appear so compelling that I couldn’t have found them online or through other sources. The truth is that I appreciate why some of the recipes are from somewhere in Spain, I don’t feel connected with why the chef chose the recipes he did, or why his choice reflects a regional taste. Perhaps Spanish food just isn’t interesting without the meat and seafood, perhaps the food revolutions the author wrote about weren’t transformational, perhaps the chef spent too much time outside his homeland, perhaps I’ve just wasted my money.
It’s a quick read. I don’t know where to find a better vegan Spanish cookbook but I think I would keep looking

5.0 out of 5 stars Beautiful book with delicious recipes
This is such a beautifully written book with short descriptions of the food and their origin. The recipes are simple to follow and taste delicious. I bought it to recreate Spanish holiday recipes for weekend treats but I can see many becoming weeknight staples.

5.0 out of 5 stars Fantastic vegan versions of Spanish classics
Firstly, the book is beautiful. Lovely photos of every recipe. The book is split into 6 parts: Basics, Tapas, Pinchos, Starters, Main Courses and Desserts. The recipes cover all the Spanish classic dishes such as: Paella, Tortilla, Gazpacho, Aioli, (vegan) Chorizo, Flan, Horchata and even a take on cafe cortado. There are recipes ranging from very basic to some challenging ones, but all use ingredients that are relatively easy to find, especially if you live in Spain.

5.0 out of 5 stars Great gift for vegan friends
Got this as a gift for a colleague that moved to Spain, and as much as I can judge by his reaction, he loved it. The photographs are beautiful, the quality of the print as well, and the recipes are easy to follow and cover wide variety of dishes (from very basic ones to a little bit more complicated). Overall, I believe it was a perfect gift for a vegan friend trying to calibrate his taste buds to Spanish cuisine.

4.0 out of 5 stars Bonitas fotografias, recetas sencillas
Es un libro con recetas bastantes sencillas y fotografias bonitas.
Seguramente las recetas no te vayan a sorprender si eres español, pero me parece un buen regalo para amigos extranjeros que sean vegetarianos (para eso lo compre).

4.0 out of 5 stars Yummy but...
Was looking forward to this book. Artistic display of recipes in photographs. Main drawback: most of the recipes are tapas rather than meals.
