When I first saw how thick this book was I was very excited about it. But as I started looking at it I kept finding more and more oddities.First off, it's Asian tofu dishes only. The chapters are based on country, Japan, China, India, etc. Asian countries are all that's represented....there's no Mexican or Polynesian or French, etc. This was my first disappointment as I have, no joke, 8 other Asian cookbooks that contain a large percentage of these recipes.Next, the chapters are by country, not type of dish. What this means is that appetizers, soups, entrees and desserts are in every chapter. I assumed there'd be an index of dishes by types (soups, appetizers, desserts, etc.) but the index is even more bizarre....it's by type of tofu (see photo) or ingredient. I've been a veg for over 40 years and never ever have I searched for a recipe based on the type of tofu.The third thing I found odd was how the ingredient list for each recipe is presented. It is not in a list, it's like in a paragraph (see photo). I found it very difficult to keep track of what's needed when printed like this.So take all those oddities together and this is what happens....if you're in the mood for a soup (or whatever) you have to go through the WHOLE book to find all the soups (or whatever) as there are soups (or whatever) in every chapter. You can't even turn to the index and see a list of soups/entree's/desserts/etc. I found this absurd, I own over 100 veg cookbooks and I only remember one other book with this bizarre organization (Madhur Jafferys World Vegetarian).If you decide you want to cook a whole meal from Japan (or wherever) you're still screwed as not every chapter has every type of dish (and do you really want a whole meal made from tofu?)I just found the whole thing too difficult to use...too difficult to find a recipe, too difficult to read the ingredient list, too difficult to come up with a menu, etc.

Didn't want to dock the author, but the book came with two pages that weren't cut apart properly and had weird rips in them. Otherwise it's a good read and has recipes I'll be sure to try!

I'm new to the tofu world but I'm finding this book absolutely fantastic. I've made a bunch of dishes and they've all turned out as advertised. The book is gorgeous, which is a great bonus.

While it “appears” to have a lot of good content, the Kindle version of this book cannot really be read on my iPad. The print is small and blurry even on the newest of iPad Kindles. The print cannot be re-sized. I would have loved to read this book as it appears to be informative, but I cannot. Small, blurry text makes it extremely difficult.

Maybe if they re-format this book for Kindle, I will revise my review (when I can read it). For now this is useless.
