First off, it's Asian tofu dishes only. The chapters are based on country, Japan, China, India, etc. Asian countries are all that's represented....there's no Mexican or Polynesian or French, etc. This was my first disappointment as I have, no joke, 8 other Asian cookbooks that contain a large percentage of these recipes.
Next, the chapters are by country, not type of dish. What this means is that appetizers, soups, entrees and desserts are in every chapter. I assumed there'd be an index of dishes by types (soups, appetizers, desserts, etc.) but the index is even more bizarre....it's by type of tofu (see photo) or ingredient. I've been a veg for over 40 years and never ever have I searched for a recipe based on the type of tofu.
The third thing I found odd was how the ingredient list for each recipe is presented. It is not in a list, it's like in a paragraph (see photo). I found it very difficult to keep track of what's needed when printed like this.
So take all those oddities together and this is what happens....if you're in the mood for a soup (or whatever) you have to go through the WHOLE book to find all the soups (or whatever) as there are soups (or whatever) in every chapter. You can't even turn to the index and see a list of soups/entree's/desserts/etc. I found this absurd, I own over 100 veg cookbooks and I only remember one other book with this bizarre organization (Madhur Jafferys World Vegetarian).
If you decide you want to cook a whole meal from Japan (or wherever) you're still screwed as not every chapter has every type of dish (and do you really want a whole meal made from tofu?)
